How To Make Soft and Chewy Peanut Butter Cookies

  • 1/2 cup smooth peanut butter
  • 1/2 cup salted butter, softened
  • 3/4 cup golden brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs, large
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 cups mini marshmallows
  • 1 cup Skor bits
  1. Preheat oven to 350F.
  2. In a large mixing bowl combine peanut butter, softened butter, brown sugar and granulated sugar using an electric mixer until smooth.
  3. Add the eggs and vanilla and continue mixing.
  4. Then add in the flour, baking powder and salt. Use the electric mixer starting on low speed to mix the dry ingredients into the dough.
  5. Add the marshmallows and Skor bits to the bowl and use a rubber spatula to stir them into the cookie dough.
  6. Pour the mixture out onto a greased 10 x 15 inch cookie sheet and spread it out evenly.
  7. Place the cookie sheet in the oven and bake until the top of the cookie is just starting to brown. 18-20 minutes.
  8. Remove from oven and allow to cool slightly before slicing and serving.
