Ingredients
- 1 cup butter
- 1/2 cup brown sugar
- 1 teaspoon vanilla
- 3 cups oats
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 1 1/2 cups chocolate chips
- 3/4 cup peanut butter
- Line an 8x8 or 11x7 glass pan with parchment paper. Set aside.
- In a large sauce pan, combine butter, brown sugar, and vanilla. Heat till the butter is melted and sugar is dissolved, stirring constantly.
- Add oats, cinnamon, and salt. Cook, stirring constantly for 4-5 minutes.
- Reserve 1/4 cup of mixture and pour the rest into your glass pan. Spread mixture evenly, pressing down to create a base. Set pan aside.
- In a double boiler, melt chocolate chips and peanut butter together until a smooth consistency is reached.
- Immediately pour over your oatmeal mixture base.
- Sprinkle reserved oatmeal mixture over the top.
- Place in the refrigerator to set. This typically takes 2-3 hours.
- Once set, remove from the refrigerator. Lift bars out of pan by gripping the parchment paper.
- Cut into squares.
- Serve.
