Chocolate Chip Oatmeal Bars

  • 1 cup butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 3 cups oats
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/2 cups chocolate chips
  • 3/4 cup peanut butter
  1. Line an 8x8 or 11x7 glass pan with parchment paper. Set aside.
  2. In a large sauce pan, combine butter, brown sugar, and vanilla. Heat till the butter is melted and sugar is dissolved, stirring constantly.
  3. Add oats, cinnamon, and salt. Cook, stirring constantly for 4-5 minutes.
  4. Reserve 1/4 cup of mixture and pour the rest into your glass pan. Spread mixture evenly, pressing down to create a base. Set pan aside.
  5. In a double boiler, melt chocolate chips and peanut butter together until a smooth consistency is reached.
  6. Immediately pour over your oatmeal mixture base.
  7. Sprinkle reserved oatmeal mixture over the top.
  8. Place in the refrigerator to set. This typically takes 2-3 hours.
  9. Once set, remove from the refrigerator. Lift bars out of pan by gripping the parchment paper.
  10. Cut into squares.
  11. Serve.
